Position: Sous Chef/Assistant KM
We are seeking an experienced, driven, and highly organized Sous Chef to join our Dana Point leadership team. This is a hands‑on role that requires strong leadership, consistency, and a commitment to excellence.
Candidates must be willing and able to work a minimum of 55 hours per week, including weekends and peak service periods, to support daily operations and maintain our high standards.
Key Responsibilities
Lead kitchen operations during service with speed, accuracy, and composure
Maintain high standards of food quality, consistency, and presentation
Oversee prep systems, product rotation, and daily readiness
Train, coach, and mentor line cooks and prep cooks
Support inventory management, waste logs, and cost‑control systems
Ensure all food safety, cleanliness, and sanitation standards are met
Communicate effectively with FOH and BOH teams
Model professionalism, punctuality, and impeccable personal hygiene
Help maintain a positive, respectful, and accountable kitchen culture
Qualifications
2+ years of experience as a Sous Chef or Lead Line Cook in a high‑volume kitchen
Strong leadership and communication skills
Ability to maintain consistency and calm during peak service
Deep understanding of prep systems, line organization, and seafood handling
Reliable, punctual, and committed to high standards
Ability to lift 40+ lbs and stand for extended periods
ServSafe certification preferred
