Responsibilities

[ Food Preparation & Culinary Excellence ]
- Prepare all types of sushi, including nigiri, sashimi, and specialty rolls.
- Expertly cut, slice, and fillet various types of fish.
- Create new and creative special rolls to enhance the menu.
- Consistently prepare and serve dishes according to restaurant recipes, portioning, plating, and presentation standards.
- Produce high-volume orders efficiently while maintaining strict quality standards.

[ Food Safety, Hygiene & Quality Control ]
- Maintain strict hygiene standards and follow Department of Health (DOH) guidelines.
- Inspect the quality and freshness of all fruits, vegetables, and fish used in sushi preparation.
- Sterilize all utensils, instruments, and equipment before every use.

[ Kitchen Operations, Inventory & Cost Management ]
- Manage food stock and ensure workstations and service lines are replenished and prepared for incoming shifts.
- Ensure all products are ordered, received, and inspected according to restaurant specifications and receiving policies.
- Help control food costs and minimize waste by following proper storage, requisition, and recipe procedures.
- Assist with department inventory and assist with team scheduling as required.

[ Communication & Team Collaboration ]
- Coordinate seamlessly with front-of-house staff to fulfill orders, accommodating special requests and dietary allergies.
- Communicate clearly and effectively with managers, kitchen team members, dining room staff, and guests.
