Sam Foods LLC is developing a food-service concept centered on Hainanese chicken rice. The operation is expected to work from a licensed shared commercial kitchen in Costa Mesa, California. The exact location will be provided to qualified candidates during the interview process.

We are hiring one Hainanese Chicken Rice Lead Cook / Kitchen Lead.

Responsibilities:
• Consistently prepare poached chicken, seasoned chicken rice, sauces, garnishes, and related menu items
• Control chicken doneness, food quality, portioning, presentation, and production timing
• Document recipes, weights, temperatures, prep lists, and operating procedures
• Train additional kitchen staff so production does not depend on one person
• Maintain food-safety, sanitation, inventory, storage, and waste-control standards
• Support paid pre-opening recipe and production trials

Qualifications:
• Experience with Hainanese chicken rice, poached chicken, Chinese/Southeast Asian cooking, or comparable commercial-kitchen production
• Able to produce consistent food at commercial volume
• Reliable, organized, and comfortable working in a shared commercial kitchen
• Able to communicate procedures and train other cooks
• Must be legally authorized to work in the United States

Compensation: $26-$32 per hour, depending on experience.
Schedule: Initial paid trials and pre-opening work; final hours will depend on kitchen availability and operating volume.
