Purpose
Build a sushi program centered on takeout, pickup and delivery, with additional revenue from party platters,
pre-orders and catering. Limited dine-in may be accepted by reservation when business volume and kitchen
capacity allow.

Primary Operating Focus
The initial model will be primarily sushi takeout, pickup and delivery. The goal is to keep the kitchen
organized and allow the chef to focus on quality, speed, presentation and consistent execution. Full-service
dine-in is not the initial focus.
Additional Sales Opportunities
The chef will help develop party platters, advance orders and catering packages for parties, businesses and
special events. Limited dine-in may be offered by reservation when the kitchen can accommodate it without
disrupting takeout, delivery or catering orders.
Initial Performance Review
The initial working period will be used to evaluate sushi quality, speed, cleanliness, dependability, menu
development, portion and food-cost control, teamwork, customer response and the chef's ability to help grow
sales. Future pay raises may be discussed based on experience and performance.
Potential Partnership
For an exceptional chef who becomes an important part of building and growing the sushi operation, the
owners may later discuss profit sharing or participation of up to 10% in the sushi operation. Any ownership,
profit sharing or partnership arrangement would be negotiated separately and documented in writing; it is not
automatically granted as part of employment.
